Make cake flour (2 servings) yourself by mixing 110 grams of flour with 20 grams of cornstarch and sift it several times.
Ingredients Matcha whipped cream filling:
Whipped cream | 150 ml
Sugar | 1.5 tablespoon
Vanilla flavor | 0.5 tsp
Matcha | 1.5 tsp
Preparation Matcha Cake Roll – DIY – Cake Roll recipe:
Separate the eggs and in the meantime let the egg whites chill in the refrigerator until use.
Divide 80 grams of sugar between 2 bowls> bowl A: 60 grams and bowl B: 15 grams.
Use a bamboo brush and mix Matcha with water until smooth.
Mix with a whisk egg yolks, Matcha water, sunflower oil and 20 grams of sugar (bowl B).
Sieve cake flour in parts and mix until lump-free.
Mix the egg whites until frothy with a mixer and add 60 grams of sugar (bowl A) in three parts. Mix this until stiff peaks form. Add 1/3 of egg whites to egg yolk mixture and toss well.
Pour the egg yolk mixture into the egg whites and mix gently with a pan scraper. Pour onto a baking tray lined with parchment paper. Smooth the batter and tap gently on the table a few times. Put in the baking tray in the oven.
Oven: 180 degrees Celsius, for about 15-17 minutes. Test with a toothpick whether it comes out dry.
Remove the cake from the oven and carefully cut the edges.
Deposit on a work board lined with parchment paper.
Very carefully remove (old) baking paper from the cake.
With the new piece of parchment paper, try to roll the cake very carefully.
Allow to cool completely and make the Matcha filling in the meantime
Preparation matcha whipped cream:
Beat whipped cream until foamy and add sugar, vanilla flavor and possibly Matcha. (If desired, add more sugar or Matcha).
Mix whipped cream until stiff and until it takes on a spreadable form.
When the cake has cooled, brush the cake with a thin layer of cream (with a little less filling at the end).
Use the baking paper to slowly form a roll. Pack it and let it cool in the fridge for at least 2 hours.
